Recipes: Chocolate Chip Cookie Bars Submitted by Marion Guzik - Lethbridge 1¼ cups firmly packed light brown sugar ¾ cups butter flavor Crisco all-vegetable shortening or ¾ of a butter flavor Crisco stick 2 tablespoons milk l tablespoon vanilla 2 eggs 1 ¾ teaspoons baking soda 1 cup semi-sweet chocolate chips 1 cup coarsely chopped pecans (optional) Heat oven to 350 F. Spray 13 x 9 inch baking pan with Crisco No-Stick Cooking Spray. Place cooling rack on countertop. Place brown sugar, butter flavor Crisco, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg, beat well. Combine flour, salt and baking soda. Add to shortening mixture, beat at low speed just until blended. Stir in chocolate chips and pecans if desired. Press dough evenly onto bottom of prepared pan. Bale at 350 F for 20 –25 minutes or until lightly browned and firm in the center. Do Not Overbake. Cool completely on cooling rack. Cut into 2 x 1- ½ inch bars. If pecans are omitted, add an additional ½ cup semi-sweet chocolate chips. I have not tried these bars but they sound very good and easy to make. |
Cog Au Vin Blanc ( Chicken in White Wine) Submitted by Mona Wells, Lethbridge ¼ cup all purpose flour ¼ tsp. Each salt and white pepper 3 lbs. (1.5 kg.) chicken breasts skinned and boned cut into bite sized pieces 2 tbsps. Vegetable oil ½ lb (250 grams) mushrooms, thickly sliced 3 crushed garlic cloves or minced garlic 2 cups dry white wine ¼ tsp. Each of salt and freshly ground black pepper 1 bay leaf 1 tsp. Dried leaf thyme 3 green onions sliced In a medium size bowl, blend flour with ¼ tsp each of salt and pepper. Heat oil in a large saucepan set over medium heat. Cook chicken in several batches, placing in a bowl when lightly browned. Add mushrooms and garlic to pan. Saute for 2 mins. Add white wine, salt, black pepper, bay leaf, thyme and green onions to pan along with browned chicken and bring to a boil. Cover, reduce heat to low and simmer for 15 mins. Serves 8.

| In Response to Rose James (from
the August newsletter) I was interested in your question as I had similar concerns a couple of years ago. I have had TN for about 25 years but when it was finally diagnosed 12 years ago I had an MVD. It gave me 100% relief from pain for about 10 years then the dreaded twinges started again. I tried to ignore them but you don’t ignore TN for long. I went back to my doctor, to a neurologist and had another MRI. It all just confirmed my suspicions; it was TN pain I was having again, so I was put back on Tegretol. I upped my doses (within reasonable limits) until the pain went away. After about a month I slowly weaned myself but I stress the "slowly" part. I also did this in consultation with my doctor. I am now once again 100% pain free and am on no medication whatsoever. I pray it stays that way but if it doesn’t, I will go back on medication, have another MVD or do whatever it takes to find release. No one should ever have to suffer that way until each and every option has been explored to the fullest extent. Have a wonderful, pain free life. Helen Brown, Calgary |

| Hello everybody. Well summer
has almost come to an end and our nights
definitely have a feel of autumn approaching.
Snow has even fallen in the more northern parts
of Alberta already. Before we know it, another
year will have soon gone by again.
This issue is somewhat shorter than the usual ones and I’m going to blame it on the fact that everyone has been busy with the new school year, summer holiday ending, getting our yards ready for approaching winter, it’s been too hot, it’s been too windy, it’s been too rainy, and whatever other reasons we can think of. Please, Please, Please – your submissions are what help to keep this newsletter alive. Send me items of interest, questions, answers, what-ever! Please help me out with items to put into the newsletter! I hope you all have a great October and a wonderful Thanksgiving. Patty Happiness is not a product of our surroundings; it's something we must make inside ourselves. |
